Corn Fitters

  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 egg
  • 1 cup buttermilk
  • 1 medium onion, finely chopped
  1. Mix and sift together the dry ingredients (cornmeal, flour, salt, and pepper).
  2. Add the beaten egg, buttermilk, and finely chopped onion to the dry ingredients.
  3. Mix the ingredients well to form a batter.
  4. Drop spoonfuls of the batter into deep hot fat (oil) for frying.
  5. Fry until golden brown.
  6. Drain the fried fritters on paper towels.
