Lemon Squares

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup butter (softened)
  • 1/4 cup powdered sugar
  • 2 eggs, well beaten
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Grated peel of one lemon
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking powder

Instructions:

  1. Preheat oven to 350°F.
  2. Lightly grease the sides only of an 8-inch square baking dish.
  3. In a medium bowl, beat together 1 cup flour, butter, and powdered sugar until the mixture is fine and crumbly. Pat onto the bottom of the prepared baking dish and bake for 20 minutes.
  4. Meanwhile, in a large bowl with an electric mixer, combine eggs, sugar, 2 tablespoons flour, lemon peel, lemon juice, and baking powder.
  5. Pour the mixture over the cooked base and bake for 25 minutes longer.
  6. Cool before cutting into squares.

Makes 16 squares.
